Clean sprouts and add as a portion in the same plate (say plate 1).</li><li style="text-align: justify;">Keep optional ingredients like peeled Ginger, whole green Chilies and whole Tomato in another plate (say plate 2).</li><li style="text-align: justify;">Keep salt, Black pepper powder, Cumin seeds powder, Chopped Cilantro, Chopped Curry leaves, Coconut gratings in another plate (say plate 3).</li><li style="text-align: justify;">Prepare a steamer and steam vegetables from plate 1. </li><li style="text-align: justify;">Add peeled Ginger, whole green Chilies to the steamer.</li><li style="text-align: justify;">Let all the vegetables get steamed, just enough and do not over cook. </li><li style="text-align: justify;">Take out one by one, if some vegetables get cooked faster and some slower. </li><li style="text-align: justify;">While removing from the steamer, make sure to keep the Pumpkin and sprouts in a separate bowl. This bowl can be big enough to add the rest and make the stew. </li><li style="text-align: justify;">Mash pumpkin and sprouts lightly.</li><li style="text-align: justify;">Add other steamed veggies in the same bowl.</li><li style="text-align: justify;">Let it cool a bit.</li><li style="text-align: justify;">Switch off the stove and remove the steamer from the stove.</li><li style="text-align: justify;">Chop Tomato to desired size and keep it in the steamer and close the lid.</li><li style="text-align: justify;">If you would like to use the optional ingredients like Green Chilies and Ginger, grind them along with a cup of mashed Pumpkin and add it to the veggies bowl.</li><li style="text-align: justify;">Now add items like salt, Cumin seeds powder, etc., from plate 3.</li><li style="text-align: justify;">If you would like to add Tomato, take it from the steamer and add it to the same bowl.</li><li style="text-align: justify;">Mix everything and adjust taste to your preference and serve.</li></ul><p></p><p><b>Notes:</b></p><p></p><ul style="text-align: left;"><li style="text-align: justify;">Vegetables of your choice could be Ash gourd, Banana stem, Chow Chow, Snake Gourd, Ridge gourd, etc., Here I have used Ash gourd and Banana stem.</li><li style="text-align: justify;">While cutting vegetables, do not cut them into cubes as this could be difficult in chewing for elders.</li><li style="text-align: justify;">Pumpkin is used as base, so better to go for half or fully ripened Pumpkin.</li><li style="text-align: justify;">While adding veggies to the steaming racks keep veggies which might take more time in the bottom rack and veggies requiring lesser time in top rack. Also make sure to use a steamer where the juice from the veggies can be retained and collected. I used a simple Idli steamer and kept all the veggies in the space for pouring Idli batter.</li><li style="text-align: justify;">Tomato gets cooked with little bit of heat. So we can switch off the stove and the left over heat and steam in the steamer is just enough to cook the Tomatoes.</li><li style="text-align: justify;">The hotness of Green Chilies might vary from variety to variety and season to season i.e. the local variety we get is not hot enough during rainy season. So the no. of Chilies is as per your taste.</li><li style="text-align: justify;">We may not need Ginger or Green Chili or any other spices if we eat with keen hunger. <li>Ball Jaggery or jaggery powder – 75 grams</li>
<li>Water – 50 ml</li>
<li>Cashewnuts – 25 grams</li>
<li>Cardamom powder – 1/4 teaspoon</li>

<li style="text-align: justify;">Clean the carrot and steam using Idli pot. It takes 15 to 20 minutes for Carrot to become soft. Turn-off the stove and let the carrot cool down. Then grate the Carrots using big or small size grater. Keep this aside.</li>
<li style="text-align: justify;">Dry roast a few cashewnuts for garnishing and keep it aside. Crush the remaining Cashews and make a coarse powder and keep it aside.</li>
<li style="text-align: justify;">Take water in a bowl and heat it up. Put ball jaggery pieces or jaggery powder and boil it. The jaggery will melt completely. If you feel there are any impurities in jaggery, filter the syrup at this stage and then place it on stove again and continue boiling. </li>
<li style="text-align: justify;">When the syrup starts thickening, add the grated Carrot and keep stirring. In 10 minutes, this mixture will form a lump consistency. Now add the Cashewnut powder and stir well for few more minutes. All the ingredients will be mixed up thoroughly and form a halwa consistency. Turn-off the stove now.</li>
<li style="text-align: justify;">Mix Cardamom powder and roasted Cashewnuts. Halwa is ready now. Eat it hot or warm.</li>

<li style="text-align: justify;">While I was browsing the youtube videos for Vegan Carrot Halwa, I came across <a href="https://www.youtube.com/watch?v=W-aADhP4AeY" target="_blank">this recipe</a> and found it useful. I have modified the method slightly, and made two versions i.e. <a href="https://passionsandpractices.blogspot.com/2018/03/all-natural-carrot-halwa.html" target="_blank">Raw Carrot Halwa</a> and Cooked one which is explained here. Both versions came out well.</li>
<li style="text-align: justify;">The measurement of sweetner given here is only as approximate quantity. You may adjust the taste as per your choice. You may also use Palm crystal powder instead of Jaggery powder.</li>

<li>Ball Jaggery or Jaggery powder or Palm crystal – 1 cup (200 grams)</li>
<li>Water – 1 1/2 cup (approximately 250 ml to 300 ml)</li>
<li>Dry Yeast – 1/2 teaspoon</li>
<li>Cardamom powder – 1/4 teaspoon</li>
<li>Cashew nuts – as per your choice</li>
<li>Coconut oil or Sesame oil – 1/4 teaspoon</li>

<b>Steaming in Idli pot: </b><br />
<ol>
<li style="text-align: justify;">Take the Idli pot and fill water for 1 inch height. Place it on the stove and keep only the bottom Idli plate.</li>
<li style="text-align: justify;">If your cake mould is in round shape, then place a ring on the Idli plate and then place a wider plate on the ring. It helps the mould to stay in the right position while steaming.</li>
<li style="text-align: justify;">If you are using tumblers as mould, place them directly on the Idli plate. No need to use ring here. </li>
<li style="text-align: justify;">Let it steam for 15 minutes. Now open the lid and insert a long stick in the middle of the cake. If the stick comes out clean, we can consider that cake is cooked in the right consistency. Turn-off the stove. </li>
<li style="text-align: justify;">Remove the cake mould from Idli pot and let it cool down for some time. Turn the mould upside down on a plate. The cake will come out on its own. If required, use a spoon or knife to take the cake out from the mould.</li>

<li style="text-align: justify;">After reading this post, a beginner may feel that the cake preparation is a lengthy and a complex process. But it is not so. One should try this just one time, and then they will change their perception.</li>
<li style="text-align: justify;">The Dry yeast packet is available in Super markets and Essence stores. If you buy this pack and keep it at home, you may use it handy whenever you want to make Cake and Bread. </li>
<li style="text-align: justify;">The consistency of Cake batter should neither be too thick nor too thin. Add little more wheat flour if it is too watery. Similarly, you can also adjust sweetness as per your taste.</li>
<li style="text-align: justify;">The taste of cake is slightly different in steaming method and baking method. Try both types and then choose your preferred one.</li>
<li style="text-align: justify;">I have also tried to make cake using only with millet flour (Sorghum and Pearl millet) following the same process. But it was not successful. <li style="text-align: justify;">Take Wheat flour in a wider bowl.</li>
<li style="text-align: justify;">In another vessel take one of the sweetener of your choice from the above mentioned list, pour little water and heat it up. Let the sweetener dissolve completely and then switch-off the stove. Let the syrup cool down a bit and then pour this syrup in the Wheat flour bowl. </li>
<li style="text-align: justify;"><b>Activating the Dry Yeast:</b> Take half glass of warm water. Dissolve a teaspoon full of Jaggery powder in it. Then add Dry Yeast in it. Do not shake or move the glass from its position. The Yeast will drown completely in few seconds and float again on the surface of water and form froth. It will also have fermented fruits’ smell. Pour this liquid immediately in the Wheat flour bowl. </li>
<li style="text-align: justify;">Add the remaining water in the bowl and mix all these ingredients without any lumps. If required add more water and adjust the consistency to Idli batter. Cover this bowl with a lid and keep it aside for minimum 2 hours to maximum 4 hours. By now batter would be fermented. </li>
<li style="text-align: justify;">Meanwhile, dry roast the Cashew nuts until they become golden brown. After it cools down, break them into small pieces and keep it ready.</li>
<li style="text-align: justify;">Before baking or steaming the cake, add half of the quantity of Cashews and Cardamom powder and mix it well. </li>
<li style="text-align: justify;">Now take the vessel or cake mould of your desired shape. Drizzle few drops of Coconut or Sesame oil in the mould. Transfer the cake batter to it. Sprinkle the remaining Cashew nuts on the top of the batter.</li>
</ol>
<b>Baking in Pressure cooker:</b><br />
<ol>
<li style="text-align: justify;">Take a Pressure cooker of 5 litres to 7.5 litres. Remove the gasket and the weight. </li>
<li style="text-align: justify;">Place the cooker on the stove and fill it with sand for 1 inch height. Turn-on the flame and let the cooker remain in medium high heat for about 5 minutes.</li>
<li style="text-align: justify;">Place a ring inside the cooker. On top of it, place a wide stainless steel plate. Then keep the cake mould carefully on the plate. </li>
<li style="text-align: justify;">Cover the cooker with lid and let the cake bake on low heat. After 30 minutes, you will get the aroma of the cake. </li>
<li style="text-align: justify;">Then insert a stick in the middle of the cake to check the consistency. If the cake is fully cooked, the stick will come out clean. </li>
<li style="text-align: justify;">Remove the mould from the cooker and let it cool down for some time. Turn the mould upside down on a plate. The cake will come out on its own. If required, use a spoon or knife to take the cake out from the mould.</li>

<li>Poovan or Rasthali Banana – 2 nos.</li>
<li>Dates – 8 nos.</li>
<li>Honey – as per taste</li>
<li>Jaggery powder - as per taste</li>
<li>Cardamom powder – 1 pinch</li>
<li>Palm crystals – 1 teaspoon</li>
</ol>

<li style="text-align: justify;">Remove the seeds from Dates and soak in water for 1 hour atleast. </li>
<li style="text-align: justify;">Take the bananas of your choice and peel them. Slice them into small pieces and put them in bowl. </li>
<li style="text-align: justify;">Add the Dates without water in the bowl and mash these two ingredients with hand or a spoon. It should become like a paste.</li>
<li style="text-align: justify;">Add Honey and Jaggery powder as per taste.</li>
<li style="text-align: justify;">Sprinkle Cardamom powder. </li>
<li style="text-align: justify;">Finally add Palm crystals and mix all the ingredients thoroughly. Check the taste and adjust the sweetness accordingly. </li>
<li style="text-align: justify;">Now fresh Panchamirtham is ready to taste.</li>

<li style="text-align: justify;">Panchamirtham is one of the famous offerings given in the temples of Lord Subramanya in Tamil Nadu especially in Palani. I got the recipe of this all natural sweet in the book written by Ms. Rathi Loganathan called ‘<a href="http://fruitsandrealdiet.blogspot.com/">Arockiamey Aanandham</a>’. We tried this at home immediately and it came out well.</li>
<li style="text-align: justify;">We also used Country variety banana and that also tasted good. </li>
<li style="text-align: justify;">You may alter the quantity of Dates, Honey and Jaggery powder as per your choice.</li>
<li style="text-align: justify;">The Palm crystals should not be too big or too small. One should be able to bite it without any difficulty.</li>

<li style="text-align: justify;">Soak Almonds on the previous day of Halwa preparation. Wash it and change the water for every eight hours and soak with fresh water. It will sprout on the next day. Chop this vertically.</li>
<li style="text-align: justify;">Remove the seeds of Dates and soak in water 8 hours before. Take the fruits from water and mash it with a spoon.</li>
<li style="text-align: justify;">Grate the Carrot and keep it aside.</li>
<li style="text-align: justify;">Remove the tender kernel from the Coconut and grind it using a mixer grinder. Make a fine paste.</li>
<li style="text-align: justify;">Transfer all these ingredients to a bowl. Add Cardamom powder and mix thoroughly. Raw Carrot Halwa is ready to taste.</li>

<li style="text-align: justify;">I have watched this <a href="https://www.youtube.com/watch?v=W-aADhP4AeY" target="_blank">youtube </a>video and thought of making it complete raw version. The taste of raw version turned out good. Hence I am sharing it to all.</li>
<li style="text-align: justify;">When you buy Coconut in shop, ask for the tender type. Say that you are going to eat it raw. If you are using the kernel of the matured Coconut, the texture of the Coconut paste will not be so good.</li>
<li style="text-align: justify;">You may increase or decrease the quantity of the Coconut kernel, Dates and Almonds as per your taste.</li>
<li style="text-align: justify;">As shown in the above mentioned video, I have also made complete cooked version of Carrot Halwa. I shall share the recipe in <a href="https://passionsandpractices.blogspot.com/2018/04/carrot-halwa.html">another post</a>.</li>

<li>Ash gourd (Peeled & Grated) – 2 cups (400 grams)</li>
<li>Jaggery / Jaggery powder / Palm crystals powder – 1/2 cup (appr. 80 grams)</li>
<li>Cardamom powder – 1 pinch</li>
<li>Cashew nuts pieces – 2 teaspoon</li>
</ol>

<li style="text-align: justify;">Remove the skin of Ash gourd. Grate it using the big whole in Grater. Take 2 cups of gratings.</li>
<li style="text-align: justify;">Place the pan on the stove and transfer the gratings to it and cover the pan with a lid. The Ash gourd will start cooking with its own water content. Keep stirring the Ash gourd now and make sure that it does not stick to the bottom of the pan.</li>
<li style="text-align: justify;">When it is completely cooked, add the Jaggery powder or Palm crystal powder as per your choice and keep sauteing the mixture. The whole mixture will form a lump and come to Halwa consistency. Turn off the stove at this stage.</li>
<li style="text-align: justify;">Add Cardamom powder and dry Roasted Cashew nut pieces. Serve hot or warm.</li>

<li style="text-align: justify;">I was going through a few Ash gourd Halwa recipes on internet. Most of the people use Ghee and white sugar in it. I just thought of making Satvik version and tried this method. The Halwa came out tastier. So I am sharing the same recipe here.</li>
<li style="text-align: justify;">Ash gourd will turn out transparent when it is completely cooked. Still it will not become mushy. So you have to be careful while deciding whether Ash gourd is cooked well or not.</li>
<li style="text-align: justify;">Also the kind of Ash gourd you buy will dictate the final Halwa's taste. Some Ash gourds are sour and some has very subtler sour taste. Also some will have a spongy texture and some will have pulpy texture.</li>
<li style="text-align: justify;">In my personal opinion, using Palm crystal powder for sweetness gives the taste of sugar. When I use Jaggery powder, it gives slightly tangy taste. You may try both types and choose your favorite version.</li>
<li style="text-align: justify;">You can also make Carrot and Beetroot Halwa using this recipe.</li>
